Ooookay I have a cookbook from 1950 and it says to use a pressure cooker and gives times/weights for that... but mentions pressure canning once in awhile.

Is it meaning pressure canning or does it actually pressure COOK them but was found to be unsafe later? I'm a bit confused. Especially since it spells syrup with an i.

As its so old, you'll find terms have changed. I would be concerned using that book for the pressure side of it, as the equipment has changed since then. I bet it has some pretty cool ideas that have long been forgotten!?

This is what I found on it on a pretty nicely explanitory blog. I may have to try this... they have other fruit versions available as well. Looks like some kind of spoon size sweetened fruit kept in a jar with a sweetened syrup to preserve it.

and this is what they are: fruits in very dense sweetened syrup. you can make it with all kind of fruits or mixes of fruits. it is delicious.

eta: this is how it looks the fig gliko koutaliou

Well, it does say 'pressure canning' sometimes and 'put in pressure cooker' other times... so maybe the terms were interchangable? Or maybe they did mean what they said??!

Were cans once pressure cooked? Or was it always pressure canned? There's that weight difference thing, right?

GAH I have just started to get handfuls and handfuls of beans every single day... I need a pressure canner like...now. D:

It does have some AWESOME ideas and notes... it even has a chapter on how a housewife should prepare a meal on a Sunday to get the most out of it during the week.. it has recipes for how to use your OWN canned produce.. and even a chapter on how to properly set your table to please your husband.

I have a flat top, and it hasn't broken it yet. I would prefer to have a flat bottom on the presto because it is not real easy to regulate the heat on the flat top. The thermostat keeps turning it on and off to keep the temp steady...on the stove, the pressure canner needs fiddling with. I have to turn up the temp then turn down to keep it in that perfect pressure range. i don't leave the kitchen when I can anyway, so it isn't a big deal. I get distracted so easily I know better.

I water bath can and use my pressure cooker on my flat glass top: Maytag. I have done this for 3 yrs without any problems. I also use my cast iron skillets on it.

I use my pressure cookers (2) on my flat top and my castiron too. Have always done it and my stove is 8 years old with a black glass top.

Mods please forgive me one more time for posting out of topic here - but since I posted once before I wanted to give everyone an update

Good morning everyone

GREAT NEWS!!
wee.gif
We met with my surgeon last Friday and my cancer is in Stage One and there are two small spots. We are so thankful for this wonderful news

The Dr has no reason to believe that I will not be 100% OK. I have my surgery scheduled for 4-6-11 and should be in the hospital no more that 1 day and recovered in 2 weeks.

Can't wait to get this behind us.

I also can't wait to get back to canning and such. Our Mulberry tree and berries bushes are starting to get leaves and hopefully the weather has been kind and we will get peaches this year as well. We have been working on getting the canning pantry and freezer cleaned out to make room for all this years goodies.

So will be back to normal here real soon. Once again thanks for being there and I wanted to keep you all updated.

Take care everyone and happy canning!!

Sandee
