What are you canning now?

Dollar General has them for $1.00

Really?! ugh I wish our Dollar Generals would carry canning stuff! We have 6 dollar generals within 20 miles of us and NONE of them have canning supplies. I have asked before and they say there is just too many other stores that carry supplies. blah.

oh well I am not that worried since I bought the lids in bulk this year.

Do you know what brand the lids are? I prefer Ball or Kerr but will use others.

they only carry golden harvest jars and lids

If the canned jar has bad stuff in it you should immediately dump the contents of the jar and then clean the jar extremely well, or just toss the whole kitnkaboodle. As for pressured canned chicken.....I have chicken that I canned 3 years ago and it is still delish. Now I will say, if you have a jar of canned chicken that did not seal properly.....you will know it!! lol. The smell will let you know.

happy canning!!!!

No, once your jar us sealed, it's sealed.
Contents will go bad (and botulism could develop) only if the jar is not sealed properly.
Some people say that the food is not as tasty when it is three or four years old, but I have not noticed it with canned goods.
It's old freezer burn food that becomes chicken feed!

Glass doesn't do well in the freezer.... so do you repackage the freezer jam or does it not stay in the freezer??

I have been using glass jars for freezing for more years than I care to think about, lol. Never had a problem, ever, not even with non canning jars. Of course Ball wants you to buy their jars, fact of the matter is you can use any glass jar with a fitting lid, or you can use plastic containers made for freezing or even butter bowls.

I forgot to photo again... like I always do.... but I have 7 quart jars of pickled summer squash, 1 quart of pickled banana peppers and 2 pints of pickled cukes done. They all look so beautiful with my fresh garlic, and dill inside the jars. I even used some dill flowers in the pickles... hubby says I'm even artsy with food!

OK - - I just never knew it was OK to use glass in the freezer. I don't know why, but I always thought the glass would break in the freezer.

Learn something new every day.....

make sure you have enough space for the liquid to expand as freezes. It has to go up or out, and out is what breaks the glass. give it 'Head' room enough for expansion and you should be fine.
I freeze plastic bottles full of water for the coolers, and if my husband "helps'' and screws down the lids before it has had time to freeze, the lids or sides split. If you can freeze the foods with the lids off, and just some plastic wrap over the top, you can put the lids on after it has frozen.

just don't set it next to the frozen onions.

(I will never freeze onions again.)
