from the Ball canning book...

Strawberry Margarita Preserves

6 cups halved, hulled strawberries
2 cups chopped, cored, peeled, tart apples
1/4 cup lemon jc
4 cups sugar
1/2 cup tequila
1/2 cup orange liqueur
2 tbsp strawberry schnapps (optional)

Combine strawberries, apples and lemon jc.
Bring to boil over high heat stirring constantly.
Add sugar, stirring until disolved.
Reduce heat and boil gently until mixture thickens, about 25 minutes.
Remove from heat and test gel.
If gel stage has been reached, stir in alcohol.
Return to med-high heat and bring to boil, stirring constantly.
Boil hard, stirring constantly for 5 minutes.
Remove from heat and skim off foam.
Ladle into hot jars and process 10 minutes.

I made a big mistake when canning my strawberry jam... I used 8 cups of berries instead of 5. Used the 7 cups of sugar. Needless to say, it did not set. Is there anyway out of this "jam"??
