What are you canning now?

Most of us use the Surejel or Certo. There are some jam purists around that can get the fruit to jel with apple peeling and in that case, you might be able to make just one pint, but the surejel usually asks for no less than four cups of fruit.
The box of ball no sugar needed pectin that I have in front of me right now, says that you need 4 one lb containers of strawberries to make 3-5 half pints of strawberry jam.
and 3 pint containers of blueberries to get 3-5 half pints of blueberry jam

The ball pectin gives the amount of five 1/4lb or fourteen 6oz containers.
I get annoyed at measurements like this, volume vs weight, because oz is weight and it is volume.
I suppose this expects everyone to go purchase their fruit.
I would say pick one and 1/4 pound berries. or get a liquid measure that holds a bit more than two and one half quarts.
and go get some pectin at the grocery. It will just make your life easier.
again, this is the amount of fruit needed for the low sugar batches of jam.

As far as how long it lasts... years.
 
busy summer here too. i made 7x800ml and 3x400ml jars of sour cherries in thick syrup (gliko kutaliou), 6x800ml and 2x400ml jars of apricot jam and 9x800ml jars of apricot compote. i've frozen green beans, zucchini, sour cherries and apricots. but this is only the beginning.
 
So it's been a RED day. I got strawberries, raspberries and red currants.

Now if folks could e-mail me their best recipes? I've done strawberries but man the amount of sugar it called for was out of this world. I've never done raspberries or currants. I also have access to green gooseberry's and red too. Oh and black berries too.

I"m off to TSC for jars and lids and rims.

i forgot to say that i make 2 gallons of sour cherries liqueur too. hmmmm

we have a veryprolific bardford pear tree .. every year we wait for them to soften a bit.. they never do.. we really want to make jams this year.. is there a best way to soften pears for preserving? how do I know when its best to pick them..??
