What are you canning now?

We are going to plant clover and then use the poop from the coop and spread it ove rhte garden during the winter, also we have neighbors that raise Alpacas and they usually offer us some poop from them. We will cover the garden entirely and then let it sit and then come Spring of 2013 (if the Lord tarries) it will be soft, rich, and oh so ready for more planting. finally got finished with canning the potatoes (1 garden row)

and we have 44 quarts and 1 pint. I picked a 1/2 bushel of Green & wax beans this morning and I will be snapping and canning them tomorrow. Also picked more Zukes and Squashes, will be using them for relish and we are holding the cukes for more B&B Pickles with those. Whew!! It's bedtime,,, 'night.

Remember to keep your seals checked and replace when necessary.

Ok so tryng to feed ,my family healthier and organic grown right here,, got chickens ( egg soon ) gary tilled me a great big garden.. ive got all kinds of squash and corn adn maters,,

, soooo the next step is to can, and freeze.. Colt bought me a really nice sharp knife set for mothers day,,, so two days ago I cut from the center of my nail bed a Huge chunk down into the nail bed..Ouch.. slowed my typing... so today went to Aldi's cause they have those handy dandy mandolin slicers,,,, yes,,,, soooo fast what took me a half hr to slice witha knife I had done in 8 min,,,s awesome...... crook neck sliced packeged and in the freezer,... sooo happppyyyyy... move onto zuc's. whooosh.... whooosh... so easy, so fast sooooooahhhhhhhhhhh.. yup. took off the end of my rt hand ring finger,,, off ...gone,,,,... Gary later found it in the bowl of squash.... nothing there to stitch,, so we cleaned it... OGM!!!! almost unbearable painful....... got it cleaned and wrapped in vet wrap .. worlds second best invention next to duct tape ... so now I am injured on each hand,, and having to hen peck the keys,,,,

so any ideas where I can find one of those handy dandy chainmal gloves like at delies? need one before i run out of fingers,,,


I can defiantly say that I have put my blood sweat and tears into feeding my family,,, hahha

I've been freezing snow peas. And this morning, I pressure canned three quarts of cauliflower/scallion soup. And it's only eight o'clock. I feel so virtuous, and the second cup of coffee is especially delicious!

Chutney's are usually for meats. I found a mango chutney recipe I want to try. Mango is really good on pork.
 
If I can find it I'll post it, but I did a cranberry chutney last year that was to DIE for!!! I think the big difference is I used sugar in the raw for the recipe rather then regular sugar. We even served it at Thanksgiving as something unusual.

Got eight more jars of beans put up today.
Do ya'll take the rings of your jars after they cool?
Mine are getting gross, had to dig through a big box full to find eight halfway decent ones.

I am so jealous of your gardens right now. They all sound so HUGE! Our potatoes are done for this summer- didn't produce like they should have. Beans are done- only ended up with 7 quarts worth out of 3 rows! The bindweed has choked out the corn, cucumbers are starting to come on but not very many plants came up. Something keeps eating my zuchinni- we think it is an armadillo.

sigh. Oh and the tomatoes are not growing like they should- I just have a bunch of little green tomatoes on thick healthy green vines.
