What are you canning now?

I did not have enough corn to even try to process.... We ate it as fast as we could pick it.
I am going to try a fall planting of corn in a couple of weeks. I have the bed prepared and tested it today.
Tomorrow, I will add the fertlizers.....

Sorry to hear about this. Last year a friend and I spent close to $200 on fresh corn. We prepared everything to a T. Well, 44 quarts later we were finished. The corn was beautiful. her son asked if he could have a jar. He took it home opened it and took a bite and immediately called his mother. He proceeded to tell her that it was no good. The corn did not smell sour at all but it tasted sour. not sure where we went wrong or what happened but her local Geese had a ball with it. I will not waste time ever again canning corn.

So in another couple of days, I'll have enough for a small batch of dill pickles. As soon as my tomatoes start coming in, I'll be making corn relish. Haven't made any in a couple of years and I only have 4 jars left.

Busy, busy, busy bee today: 3 12 oz. jelly jars of banana peppers, 7 12 oz. jelly jars of jalapenos, 1 quart & 2 pints of beets & 7 quarts of green beans, 19 quarts of dill pickles & 20 dozen corn in freezer (some whole, some we cut off).
