Im making these pickles for the first time too. I would like to point out a discrepancy in the ingredients because I too just bought the Ball book a few weeks ago from Amazon. The cups of water in my book on the same page shows 32 cups, not 16. The rest of the ingredients match up. Since I used a stainless steel pot to boil the water,vinegar, and salt I originally was only able to use 16 cups cause that's all it would hold. After about the first week in the pot I added a few more cups because I was concerned I might not have enough brine when the pickles were canned. I'll let you all know how it comes out.

I too did not see any scum till almost exactly 2 weeks. Also the brine does become clouldy at about 1 week and this is normal as it indicates the start of fermentation. I have been bringing the pickles up occasionally and inspecting them and some of the larger cukes are softer than I would like. Not soft like spoiled cukes but not crisp. I bought a product that is recommended by Ball and it's called Pickle Crisp. Apparently it's more safe than pickling lime or other crispers. When I go to can these babies I intend to cut them into spears and add the pickle crisp to try and make them a little crisper. I'll let everyone know how that goes. Wish me luck, I have about another week of fermenting to go.

I have managed to get a few things done over the past couple of weeks though. Canned concord grape jelly, peaches, pickles and made spaghetti sauce just last night. Garlic is all pulled up now so caramelized onion jam here I come!!

Also trying to prep a few jars getting them "perfect" to enter in the fair again this year!
