What are you canning now?

I call these October beans. I have never eaten them in the pod, have started
letting them dry on the vines and vacuum packing.
 
I'm freaking tired of canning tomatoes. 16 quarts yesterday, 12 quarts today, and probably 12-16 tomorrow. Friend let me glean out his 300 plants, and while I'm eternally grateful, my canning eyes were bigger than my stamina.

Of course, I'll probably go out Wednesday and clean out the green tomatoes and make relish out of them

Also got 13 quarts of sauerkraut fermenting away.
 
OH THE HUMANITY....


two days preparing my SPECIAL Black Beans, sorting, fermenting, cooking down, cooling, HAND SORTING EVERY SPOONFUL looking for bones and fragments, reheating again, cooking extra pork chops for it. I FINALLY get to measuring it out into 3 NAME BRAND Quart jars - "Don't use the Golden Harvest jars" I told my husband as we were selecting these from used jars my neighbor donated in the storage cabinet. I fill up my jars with the hot food, I get 3 precious jars of this beautiful recipe....and set them in the canner with the already hot water and I hear it...

On jar broke.. the bottom just popped off. I lifted it out, all the beans pork & juices come out into my canner water.

Live & learn... pre boil ANY 2nd hand seriously old, stored for years and recovered under a pile of debris jars, no matter how clean you get them or how many times you wash them!

The other two jars are in the canner and are almost done now. I don't smell any black beans so I assume they are still intact after the process.

Can someone please help? I have chicken and defatted stock ready to process. I am looking for a processing time to can the chicken WITH the stock! Does no one do this? All recipes on the web seem to be canned separately. I am thinking for quarts 11 pounds for 90 minutes....do you all agree? Prolly should have come here first! DUH....

Finished 6 quarts of stewed tomatoes this afternoon and am going out to pick more...

\\(PS) cranberry creek--I saw a recipe for green tomato salsa in my searches...it sounded YUMMY! Sorry, cant remember the site though....
