Sorry Jojo, that was a typo. I meant they should be peeled, seeded and then chopped before adding to the crock pot.

Here's where mine is right now. They've been in the crockpot since 4 pm. I just put them in the food processor and added the lemon juice and vanilla bean. This will go on until morning before I add the sugar. I have it set on warm right now because its going to be a long night.

Easy peasy!

Fill your crockpot with pears on low heat (peeled, seeded and chopped), and 1/2 cup of water and let simmer for a few hours until soft. Then mush up... or through the food processor is what I do. Then back in the crockpot with 2 Tbsp of lemon juice and an open scraped vanilla bean. Cook for 1 more hour on low. Add sugar, I do about 1-2 cups and taste... if you want it sweeter add more. Then let finish up on low with the lid off so it thickens up. Keep checking it until you get the thickness you like. This can take 12-24 hour depending on crockpot size and type of pear.

I tried to do pear butter in my crockpot (without the vanilla) and it wouldn't reduce. I had it on high from 9AM until 10PM and it maybe went down 1/2 inch. I've done apple butter in the same crockpot without any issues.

Do you remove the lid while you're trying to reduce it? I leave mine off so extra liquid can escape.
