What are you canning now?

Way to go with the jam, vfem!

Wow, look at all that applesauce! That's a LOT!

I'm doing more tomato sauce right now. Can't believe we are just getting the bulk of our tomatoes in mid october. It's supposed to freeze later this week so that will be the end for sure.
 
I made pickled/spicy cauliflower and caramel apple jam last week

Tomorrow I am making Apple jelly, Caramel Apple jam, Banana/Strawberry jam and Hot/Sweet Pepper jam.

Dang, thats a lot of applesauce Duramaxgirl!! Do you own apple trees or just stock up during apple season? That had to be like 7 bushels worth!!

Those Roma beans look beautiful math ace.

While I'm catching up I was wondering if anyone knows why the jelly I recently made tastes like molasess..?

It was Fresh strawberries, blackberries, and some blueberries, I also added lemon juice and sugar. Cooked and then canned in a water bath.. It smells and tastes JUST like molasess. My mom was up visiting and she said the same thing too so its not just me. Maybe its the pot I'm using.. I had a batch of Strawberry-Mandarin marmalade have the same kind of flavor last year too. I thought it was because I left out the lemon the recipe called for.
 
Come Saturady, we will be canning Chicken.
I have lots of chickens to get butchered. So far this week I have buthered 13, gouing to make it 17 by tonight, 3 to 4 on Friday, and on Saturday we will try to finish up the last 20.

I wanted 50 quarts and ended up with 54 but one of the jars broke in the canner. Anyhow my kids and hubby love it!
 
I am getting ready to make more chicken stock... all I've canned so far has been used already!

I got through WAY more chicken stock then I could ever possibly make myself!

Thanks for the compliment on the roma beans. This is my first year at canning and I am feeling so good about all the food I have preserved this year.
I got another 4 quarts of green beans done today! Those plants look like I might get more beans in another week or so!
