What are you canning now?

This is the recipe I use. The only thing it doesn't set very firm so I adjust the pectin to 1 1/2 to 2 boxes, depending on how you like it.

ETA: the recipe DUH!

Looks GREAT.... Yum, OK can I use store bought Apple Juice? If so, what kind?

I never have, but I'm sure you could. The only one I cheat on is the Cherry Almond and I buy 100% unsweetend juice. Juicy Juice is the brand I use for this. I'm sure 100% unsweetend apple juice would be fine for this recipe too.

Flour is not an FDA approved item in canning. It may be what your issue it.

I was going to see if I can email them, because I thought the same thing!

The costco brand apple juice is 100% juice. I have also made pomegranate jelly with organic 100% juice and it was the best jelly I have had. Need to make more of that soon actually. I used the apple juice to make a spiced apple jelly (cinnamon and nutmeg) but it didnt set up quite enough, good thing I only made a 2 jar test batch. I also made some apple jelly using the apple juice with chopped apple in it that turned out really good and set up well. I cooked the apples in some apple juice first for about 20 mins.

We don't have Costco but man I wish we did! I see some great stuff comes from there.

OK, then I am trying it this weekend!

I'm going to can some dry beans but I was wondering if its ok to go ahead and put in the diced ham? I'm going to go ahead with the overnight soak, rinse, add new boiled water method.

It's a nice little video. Last week I entered The Bobby Flay Project and if my story gets chosen I will need to raise $$ and will probably join kickstarter. Stay strong and make your dreams a reality. I would name your project after what you want your business to be called, then put in what phase you are in. For example Fresh from Fogl's Farm (Phase 1: Purchasing commercial grade appliances.) That way you can raise smaller increments and have a greater chance of reaching each goal.

Oooh... kickstarter rule... we can't talk about raising fund for appliances and such. They say it turns people off and they'd prefer you not talk about equipment costs... those things are the 'creative wings' that will get people interested. I need lots of things to get going, most importantly is being able to buy larger quanity in season items, supporting the farm families and so on. That's what they want me to focus on. You get shot at funds for this project. I can mention what phase I'm in... we're preparing to offer more of our items locally even if we only end up wholesaling to the stores to get the farm produce in. We already mail order, but need more space to go outside that internet box thing. LOL

Its a great program, just read all the rules and read all the projects that did 'extremely' well and make sure you see what they offered and their goals. Its not as crystal clear as I thought it would be, and they are VERY picky about what they will support it turns out! took me 3 tries to get a proposal they would back!

ooohh thanks for the tips!
