What are you canning now?

Today I made some Lavender Blueberry Marmalade, and some Blood Orange Marmalade.
Tomorrow: Raspberry Blueberry Jam, and a Wine & Herb Jelly.
Probably a Blackberry something, too.
I just got a ton of berries from a farmer friend & am helping her can them. The Wine & Herb Jelly is just for kicks, so is the Blood Orange Marmalade.

OK, I'm now up to page 150. I keep seeing references to Marymac's Sweet N Sour Cabbage, and I have gone back and looked for it. I have Searched for it by name. I have searched for it by poster.

Does anyone have the (a) recipe, or can they point me to the post I must have missed?
 
Well everyone, I have been BUSY doing nothing lately so no canning has happened. I've tried to come up with more cost effective ways to can right now. I'm a little on the broke side, and nothing of real interest has gotten me to want to can lately. I did make some chicken stock again, but I go through so much I put a container in the fridge, and the rest in the freezer. It will all be gone by the end of the month, not going to bother to can it anymore.

What I have done though is make Lavender Sugar, Vanilla Sugar & Orange extract. I need to purchase the bottles & jars again so I can package them up all pretty to sell and give as gifts.

I did use the lavender sugar the other day to test it... I made lavender vanilla custard and it was AMAZING! The recipe is on my blog along with my eclair recipe. If you just want the custard just do the directions for the filling.


Anyways.... off to specialty bottles to find some great packages for all this. Easily going to be $50! ugh!

OH YEAH... almost forgot, I got a wholesale dealer contact me by mail and they sell bulk pectin. You can buy like 10 lbs to 1000 lbs at a time! I'm going to get a quote from them and see if its worth it. I'll let you know how that works out. I don't know if they require an EIN for wholesale or not, but I'll let you all know if they do and get you their contact information.
 
Can you freeze things in canning jars or are canning jars strictly for canning and storing in your cabinet?

I was at WalMart and saw a set of Better Home and Gardens12 pint jars on sale for $5.00 and was curious to know if these canning jars are freezer safe.



The BHG jars are made in China just and FYI  I haven't used them but have heard reports of them cracking and breaking easily.  The lids are crap.  I bought some that were clearanced $1 per dozen and had 2 failures out of 7!  Plus 2 of the rings wouldn't tighten down on a standard ball jar.  There has been reports that Made in China glass has lead in it...

I can't believe I have it, but I do. I've been slowly trying to get all of the recipes on this thread saved to my computer. Below is just as it was copied. Hope you like it.

Here is my recipe...I used red and green cabbage and it turs into a pretty fushia color

sweet n sour cabbage

Shreded red cabbage and green cabbage
sprinkle salt over, let set couple hours to wilt
drain well
make brine of
4 cup vinegar , 1 cup water, and 2-3 cup sugar.....depending on how sweet you like it
add 1 Tbl each...Mustard seed
Pickling spice
celery seed
boil this mixture about 5 min, strain brine through mesh strainer, pack cabbage into sterile jars thghtly, pour brine over, run knife to release air bubbles and seal with sterile caps. Process in water bath for 10 min after it comes back to boil
note; You may use all red or all green cabbage, and make it as sweet or sour as you like

Thought I'd share with you all what i have been up to lately:

4 years ago we were at an estate auction on Mother's day. My oldest was 9 months old, it was chilly and raining... we bought a few things but ended up leaving because of the weather. Anywho I noticed that there was a cellar FULL of canning jars (most had food in them still) big ones small ones ... HUNDREDS of jars. Well the property sold and that was that. Saturday we just happened to be in the area and noticed that the house still sets untouched- except now the house has graffiti on it. I looked into the root cellar - still untouched. Monday I went to the courthouse and found out who owned the property- it was a real estate management place across the street from the courthouse! Walked down there and asked about the jars. $50 later and I get to clean it all out!

I too have been copying all the recipes to my computer (I'm up to about page 350 on this thread, phew) but somehow I missed this recipe. Maybe I skipped a page or maybe it was one of the nights I was up til one or two AM doing it.

Have also recently dicovered (and copied the recipes to) What are you Baking and Granpa What's for Dinner. I am skeered to go back to the index to see what other threads I should be reading. LOL and now that I have them copied, have to figure out a way to organize them. AND finish my chicken coop, AND layout and plan my garden. Oh, am I supposed to be cleaning house and cooking dinner too?

I know what you mean about the cleaning and cooking. When I had kids I didn't realize how regularly they want to eat lol.

You are way ahead of me on the recipes. I'm about pg. 370 here but haven't ventured onto other threads. We're in the middle of a move right now so I guess that will all have to wait, but certainly something to look forward to.
 
What a wonderful jar find!

I have a question about jars...I purchased 5 dozen jars, in boxes, from the lady down the street. When I started going through one of the boxes the other day to can pears, I found a "square" bottom mason jar. It has a 7 on the bottom and the glass has imperfections in it. I'm assuming that I shouldn't use it to can. Is that correct? It will be cute for a candy jar on my counter top though.
