What are you canning now?

After talking to my mom I realized I was getting my directions confused. You DO boil the grapes for jelly, but not for syrup. The seeds & skins release pectin when boiled, which screws up syrup. Whew! I had been making juice for both with my other fruits.

I made an itty bitty jar of jelly out of the extra grape juice and it was good! And no sure-jell or pectin added at all. Just sugar and juice and it gelled quite nicely. So I see why boiling seeds & skins could be bad for syrup.
Luckily I only wanted jelly from the grapes!

Note to self - When all else fails, call Mom...
 
Muscadine jelly is my hands-down fav!

I'm glad you found out the answer--I've been wondering about it off & on all morning (slow, rainy day at work) lol what would we do without Mom!

So far...I have done...Pickled beets,apple butter, blackberry jelly, canned whole blackberries,peaches, B&B pickles, green beans, tomatos, and spaghetti sauce going now. Still planning on apple jelly, peach jelly, and elderberry jelly....and whatever I can get my hands on! LOL

I canned peach jam today--it's so beautiful in the jars! Yesterday, I made four more pints of dilly beans.

I still want to try canning my own salsa, especially now that my Cherokee Purples are ripening on the kitchen counter. I waited all summer for them and they're delicious!

Tomatoes, Tomatoes every where, but not a ripe one in sight. Sigh! My tomato plants are loaded with fruit, but because of all the rain we have had, the dont want to ripen. I can't wait until they do so that I can start making my spagetti sauce and canning it!

Did these a few days ago. First is cinnamon apple jelly....sooooooo pretty. Second is the ugliest thing I have EVER canned! Spiced apple rings made with green apples. Every recipe calls for peeling the apples but I have never eaten them with the peel off so I left it!!! Also, I lost a LOT of my liquid while canning them. They all sealed just fine, so are they alright?

They should be okay. Did you have trouble with regulating your pressure? Or maybe did you hurry the cool down process on the canner? Both these things will cause loss of liquid.
 
I am just a sorry person this year, I have canned nothing although I love to can, especially salsa. I am really impressed with the canned chicken The Chick Crew canned on the first page of this thread!! Wow that sure looks great! I have always been too afraid to can meat!! I guess I need to dig out my blue bell canning book and read up on the meat canning becasue that is really impressive looking!

The birds have eaten all my concord grapes this year and there were a nice amount of them, I'm sure I could have made grape jam, next year I will throw a bird netting over the whole vine and do just that. I have frozen my extra cherry tomatoes and didnt have enough large ones to can. I planted new kiwi and mulberrry and blueberry bushe this year though so maybe they will fruit next eyar, if not, def. the following year and then I will have alot of fruit to use.

Ya'll are doing a great job with the canning, your products look wonderful!!
 
So far this year I've done 4 types of jelly:

Cranberry Champagne
Apple Champagne
Cherry Champagne
Apple Cinnamon Anise

I'll be doing dill pickles this week.

Will be doing lots more jelly at some point (we give it away as Christmas gifts), salsa, BBQ sauce, green beans, tomatoes, and applesauce...
