What are you canning now?

I definitely did not have enough salsa from last year. I only made like 20 jars and they were all gone by Christmas. :p

Tomato sauce was gone even faster. Boooooooooooooooooooooo

I only have pickles, pickled squash and jarred figs left. Man, everything ran out fast.

I started planting those tomatoes & peppers today... so I thought I'd share my tomato plant fertilzer recipe for anyone who wants to make some before they plant. It helps with blossom end rot, and I'm very impressed with how many blossoms it helps make as well. Plus SUPER big root systems to boot!!!

  • 2-3 dz crush egg shells
  • 2 cups bone meal
  • 1/2 cup Epson salt
  • 14 crushed aspirin

    You need 1/4 to 1/2 cup of this in each hole you plant your tomato in. Then I make sure I bury 2/3 of the plant.... DEEP! Followed with a DEEP watering the first day. :D
 
I planted 40 tomatoe plants last year and had tomatoes running out of my ears LOL...
I only made salsa with them - -- LOTS and LOTS and LOTS of salsa.

My family is really picky when it comes to ketchup..... HUGE Heinze ketchup fans! Trust me on this, they can tell the difference and DON'T like the other brands

So making ketchup would be risky...

Spagetthi sauce we use a lot of and not particular of the brand. HOWEVER, I did a cost comparsion and determined that I could save more money using the tomatoes in salsa vesus watching for sales and using coupons to buy store bought spagetti sauce.

So, I made lots and lots and lots of salsa..... Did I tell you yet that I made LOTS and LOTS and LOTS of salsa from the 40 tomatoe plants that were planted last year ? ? LOL

I think I still have a case of salsa left....

I'm a mean mom. If you don't work in the garden, you don't eat from the garden. If you don't eat from the garden, you don't eat. I don't can to save money, so that's not really a concern here. You can buy just about everything cheaper in the store. It just comes down to quality and source.
 
I haven't been on BYC in forever. I haven't been canning as much right now, too busy with school and all. But I did make a new recipe a few weeks ago that I am calling Pinapeno Candy - It is a spin off of the Cowboy Candy (Candied Jalapenos) and it is awesome. :)

Here is the recipe:

2 lbs jalapenos, seeded and sliced
1 large green bell pepper, diced
1 large yellow bell pepper, diced
1 large red bell pepper, diced
1 large red onion, diced
1 pineapple cut into tidbits
1 tsp mustard seed
1 tsp celery seed
4-5 pinches chili powder
5 cups of sugar
2 cups Apple cider Vinegar

Bring sugar, vinegar, chili powder, celery seed, and mustard seed to a boil in a large pot. Simmer for 3 minutes. Add peppers, onion, and pineapple stir really well. Simmer for 5 minutes. Using a slotted spoon pack pepper mixture into jars, be sure to pack them tight. Return vinegar syrup back to stove and bring to a boil. Ladle syrup over peppers, adjust your seal and rings. Process in hot water bath 15 minutes for pints. If you have any syrup left over, you can go ahead and can it too. you can either save it for your next batch, or use it in numerous ways such as marinade.

I used 4 cups blackberry puree (seeds removed), 4 cups raspberries, 8 cups strawberries and 8 cups sugar. Cook until gets to gelling point and can appropriately.

To remove seeds from the blackberries, you can cook them until soft and then push through a fine sieve (or food mill), or my new method of pureeing them after softenesd in Vitamix blender and straining that. (much easier!!!) I don't worry about the seeds in the raspberries and strawberries, as they don't have the high concentration of seeds that blackberries do.

Strawberry season has begun here! I've managed 24 jars so far. Strawberry, strawberry lemonade and strawberry balsamic are done! I also knocked out 8 jars of Caramelized Onion Garlic and Balsamic Jam as well.

No sooner did I finish and list them as available in my shop did I sell out of the Strawberry lemonade!

So tomorrow I'll be spending the afternoon restocking those!!!

I ordered my pectin and its on the way... starting with a 10lb bag and see how I like the company. I was thrilled to find that shipping was included in the price. :D When I totaled up what I've paid for buying pectin at the store and what I just paid, I'm saving $135 a year!!!
 
I know I haven 't been here in a while but I have a question.

Has anyone every made Dandelion Jelly? It's made with the flower petals. I have a recipe and I'd like to try it. It does take a lot of flowers but I don't use pesticides and we should have enough.
