What are you canning now?

I made Honeysuckle jelly the other day. I used the recipe from the Lehman's web site. It turned out really good. It tastes like honey with some lemon tea syrup added to it! I am planning on putting some in my iced tea. We have so much wild honeysuckle out there blooming it seems sad not to use it in some way. I think I will do this every year. I only got about 5 1/2 8 oz. jelly jars from this recipe so might make it again before it quits blooming. I will post pics as soon as I can. Here is a link to the recipe.

I have a question for people who can meats at home. Does it taste like the canned meats from the store? I really can't stand the way the store canned pork, chicken, etc tastes. I would like to be able to can some meats this year but would rather have it taste like regular cooked meat than the way the canned meats from the store tastes. Does theirs just taste that way because of preservatives or something?

I cant help you much as far as comparing home canned meats to the stores because I have never bought canned beef before. And this is the first time I canned 'ground' beef. Just had a cow butchered and freezers are packed! So I thought hmmmmmm? I have not popped a jar yet but will soon because I have more ground beef to can if my family likes the texture and taste.

I will tell you this--I do can beef meat chunks and my family loves it! Keep in mind that after processing it keeps the cube shaped but shreds easily. I use it for those busy nights to make beef and noodles, burritos, beef pie etc. The taste is great.


I have to admit that the first time I was given a jar of canned beef (looked like canned dog food)- it sat in the pantry for over a year before I had the guts to try it. I was sorry I waited so long. I just hope the ground beef wont disappoint me either.

I cant say much about chicken (I have not canned that)

Thanks that is why I would like to can meat...for quick dinners!! I have so much chicken and also muscovy duck in the freezer. We are going to make some sausage with the duck but will still have lots leftover to can.
 
There are other canning forums if you need more info on canning chicken.

I never have enough chickens (maybe 3-5 at a time) worth canning as all we do is process our excess roos that the broodys hatch out. I just breast them out and freeze them. I simmer the rest of the carcass and then I will shred the thighs and legs. If they are not stringy (tender) the good stuff goes in a bag and the rest gets put back in the pot to make stock which I do can.

What kind of sausage do you make?

I had googled 'canning forum' so I could research more on meats. A lot of sites popped up for me.

Googling will be quicker than me trying to post them. I hope you find one that is helpful.
