Im trying to get people used to the idea they do not have to put the eggs in the frige at all so they can enjoy and appreciate the eggs right on the counter (hence clear cartons)....they use them within a week most the time anyway. I do not refrigerate them and usually deliver within 3 days of laying. There are lots of schools of thought on this but think about how long there have been refrigerators....a lot shorter time than people have been eating eggs. Of course that is a whole different thread. And yes...I have them use a Sharpie to mark the bottom of the carton and use it as an exchange with each order.
