Yes, you have to add water to both. I check mine daily and probably add a little water every 2 days. Unless you plan to do dry hatch. That I've never done some I'm unfamiliar with that method.

what is pipping?

Two types one is internal pip meaning the chick has broken through the inner membrane to the air cell. That's the first time they'll breath air. Second is external pip. They made a crack in the shell of the egg. They can stay that way for while day or more before they begin to zipper and hatch.
