What breed????

Which ones do you like better or are more calm texas a&m or jumbo brown?

I have limited experience with A&M's and non with Jumbo quail but I did notice my A&M's were much more skittish in general than my other colored quail, mostly brown aka wild type/Pharoah. I have read a few people say similar about their white birds.
