what day do you start to turn the eggs?

Starting the first day you put them in 3 x a day for 18 days. The last three days you don't turn them.
 
I put mine in and use the auto turner instantly but if I have to use my hatcher as an incubator I have to hand turn them and I start on day 2 with turning them.

I thought temp was 99.5º for the duration, and the only thing you upped was the humidity?!?
 
Close to the same temps we use. If I'm not mistaken these are the same temps recommended by hovabator.

From our own hatching I have always aimed of 100 degrees the entire time and 60% increasing the humidity 80% towards the end.

For a still air incubator I'd lean closer to the 101 our is forced air so we aim at 100. Once we weed out the eggs that are not fertile we have 100% hatch -- about 100 chicks per year

As long as the temps an humidity is close the eggs will hatch -- I mean the chicken can hatch them in high or low humidity and I'm pretty sure the temps aren't 100% consistent.

We are going to make our chicken do the work themselves this spring, but for the fall hatches we will still use the incubator
