What did you do in the garden today?

If we don’t get 2 or more inches of rain soon I’ll be loosing the whole garden. The potato Plants look great but the spuds are just starting and I see they are going to be hollow, caused from the drought we are experiencing.

Tried Squash Fritter tonight - everyone liked them! the recipe was one of the ones posted earlier, and had some garlic and parmesan cheese in them. WOW - so much liquid was extracted from the squash!! Recipe said sprinkle with salt, drain for 10 min and squeeze with cheesecloth, and now I know why!

This is a cucumber stem! Its as if 3 or 4 stems merged and kept growing. Only one is like this!

Lemon cucumbers are finally being produced!

These are called "Crystal Apple" cucumber. Never had them, so they will begin interesting to try when they are finally big enough to try. .

Surprise! My single tomatillo plant is producing a few fruits! I'm sure it would be way better with 2 plants, but seems like a few are getting pollinated. You can see unpollinated ones are smaller or turning yellow. The fertilized one begin to get bigger and turn darker green, before you can tell it has a fruit inside.

Two tomatillos!

And a perfect looking lemon cucumber - even the yellow tint is quite nice! If they are allowed to ripen further, the get more orange, and skin gets a bit tougher.

Did your tomatillos just bust out of their husks like that? Maybe I am not leaving mine on the plant long enough???
I don't think I have ever seen a cucumber stem like that one!! I know I have never heard of those varieties of cucumbers before. Most interesting.

This weekend our highs were 90/91 with heat indexes of 100 to 102. Humidity was high as well. It felt like you were walking in an oven. Next weekend is supposed to be a bit cooler!
I picked a few more cucumbers, 3 or 4 slicing tomatoes ( a bug that looks like a stink bug to me has been eating on some of them  ), a couple of cherry tomatoes ( which are really big this year), another handful of strawberries and a green pepper. Oh, and a pea pod. Yep, just one. :lau
I need to get out there and replant some green beans since the bush ones didn't do anything. I also want to plant more lettuce but I figure it is way too hot and I need to wait for cooler temperatures first.
I'm glad some of you are getting yellow squash! I got 2 small ones and that is all so far. I did grate up some zucchini and got it in the freezer!
My Mom is still in the hospital. She went in on Monday (I think). Anyway, not sure if I mentioned it here or not. She has a UTI and a blood infection, and they are keeping an eye on her kidney function. I believe that she is just waiting for a bed at the nursing home/skilled care center. I am guessing it is so they can isolate her for 14 days since she has been in the hospital ( don't want to risk Covid). They did test her for covid, but she was negative!
Anyway, I am hoping she gets to go home soon. She sounds very weak and worn out. 😞

That's the one I use too, we love it. I have a lot of those old fashioned flour sacking dish towels and I really wring the liquid out of it.

I'll keep your mom in my thoughts. :hugs

I always see them sold inside the husk in my markets. Heck they are green tomatoes. I would never choose a huskless one in the produce section.

I do eat them frequently, but processed into a green sauce(think tomato sauce) for putting on tacos and other treats and most likely they are the heat. I will never put cheese in a taco again. I would never suggest I have knowledge of making a green sauce(Salsa Verde) but I bet youtube can. Cheese and sour cream don't work with tomatillo sauce it masks all the flavor. Green sauce makes or breaks your dish. I always tell my DW I love it when the angry lady's make the stuff. Should you make a truly great Salsa all of your guests should be on the floor pleading to their god for salvation and then taking a few bites more. Shampoo, rinse and repeat. I have been there more times than I would prefer to recount publicly and trust me I would eat it again.

It does freeze well for long term storage. No idea on canning.

Helpful hint- try it without cilantro first before you take that plunge as cilantro Salsa Verde offends even me as it tastes like soap. My wife hates cilantro as well.

I often use Salsa Verde to add an extra kick to boorish beans and rice dishes too. I freeze them into ice cubes(for storage) to add a little something into ramen even. Hope this is helpful.
