What did you do in the garden today?

Not much happening here in the garden, still super busy at work. Looking forward to a couple camping trips coming up to relax my brain after the busy start to the semester (I work at a college). Supposed to get a little rain tonight.

Picked another ziplock full of green beans, need to do something with them, not sure what though - I have so many! Going to make some dill pickle chips in the dehydrator I think. I'll maybe get just a couple more cukes before the squash lady beetles have had their way & I burn them.

Funny, I grew no squash this year but had a volunteer on the outside of the garden. It's huge & has not a single bug! No svb, no squash bugs, nothing! :confused:
 
It's cool, I'll keep those on a different forum. It's my first year growing cannabis, I'm excited for it to be recreationally legal, and growing them has led to a huge amount of growth and development in my gardening abilities. My veggies and herbs are very happy this year despite pretty hostile draught and heat conditions. I have a garden grow journal going there :)

I think @Acre4Me has made quite a bit of zucchini cake this summer, maybe she'll share!

I grow (to make cream, not to smoke) but I don't share about it here. I think it's probably because it was illegal & there is a stigma still about it, but I feel odd posting anything about it online.

I love gardening & I love the fall clean up. While a bit sad, there is just something so satisfying about it!

About to go into the mid 90s with 0 rain in sight.
We did not start working so hard last Feb, just to let the sun & high temps ruin it all.

We have been putting a sun shield on our fruit & vegetables for a long time.

The zucchini cake recipe I use is for carrot cake. The carrot cake was AMAZING! In a little square of the recipe, it notes that they wondered if the recipe would work with other things too …yes for apples, zucchini/summer squash, sweet potatoes, but a NO on the parsnips, “which tasted inappropriate in a cake”. :lau

I tried the recipe in a loaf pan, but it cooks up better in a sheet, round, or square pan. I also use mini Bundt pans (6 bundts in the pan I use, and each mini Bundt takes about 1-1.25 cups of batter).

The main reason I tried this recipe is bc it calls for a whopping 7C shredded carrots per cake (2 layer 8-9” rounds). So, using the logic that the zucchini would give off more liquid, I’ve been using closer to 9-10 C of shredded zucchini per recipe, and it works great! Plus it uses 5 eggs per recipe so helps with surplus eggs. Also, no mixer is used…hand mixed with whisk then spoon or rubber spatula. Additional options for pineapple/pecan mix in, or raisin/walnut mix-in, each option (plain or with mix-ins) are all very good.

The large quantity of veg is used bc you macerate it with sugar first. The Cups of shredded veg are mixed with 1C sugar, the drained for 30 min…or longer if you are doing something else. I’ve drained, tossed, pressed, drained longer the zucchini partly bc I’m packing it in with a larger quantity compared to the carrots.

This recipe is “Master Recipe for Carrot Cake”. Cook’s Illustrated Jan/Feb 1998. I tried to find it online, but pay subscription via America’s Test kitchen site.
 
Man do I love carrot cake! Which is probably why I love the zucchini cake I posted - it's very carrot cake like. Cream cheese frosting....mmmm...

I've started to put seeds for next year in my cart. Also looking for strawberries that will grow in my GreenStalk, got a response back from Nourse on that really quickly. I think I can't order them till Oct though. My 10cf of potting mix was delivered today, I will have to see if I can kick them in the bucket of the tractor to move them.

Harvested soybeans for edamame.

One 8 ft row, x1.5 ft. Tankuro soybean from Baker Creek.

washed, dried then weighed them. There are just about 8 lbs of soybeans!! They are in the freezer for cooking later (except I’ll make some tonight).
