What did you do in the garden today?

I still have 5 jars of pickles that I canned on 11 August of last year. There's no way I can consume that many pickles before the 11th. Has anyone used their pickles past the one year mark?
I see no problem using those after a year. Just a quick question??? are your pickles in brine, or vinegar solution.
Use IDEA. Have you made pickle soup? We have it quite often. DW usually makes it on chicken soup, after 1/2 the quantity is first consumed as chicken soup. She turns the remainder into pickle soup. We use pickles in brine, but I have friend that uses pickles from vinegar.

I believe @Sueby was referring to this gardening one. I post there also.

Picked one yellow squash in the garden. Otherwise, garden is a boring place right now - it is watered but nothing is ready to pick.

A bit of chicken drama. One chicken needed doctoring for a swollen spot on her ankle - looked like bumble foot to other BYCers, even though there was no telltale center scab. So opened the swollen area, drained puss and blood. antibiotic ointment applied (after sterile saline and betadine was used prior to opening wound), then bandaged. So, we kept her in barn for several days, changing dressing and assessing the bleeding and ankle movement. Anyway, after several days, we put her in a temporary enclosure in the shade in front of the barn bc we were planning to put her on the roost last night so not picked on by others since she had been out of the run for several days. She had food and water and happily hung out all day in the shady grass. Ankle still a bit swollen, but no longer bleeding and walking fine (no limp as before). We go out to get her to put her in the coop, but she is not there. No, she was not taken or attacked bc temp fence fine, not moved or knocked over, and feed and water were in same position. We think she flew out. She is white, so we looked all over, and took flashlight to look under and in things (trees, garden, etc), but no chicken. So, wonder if she will show up today ...

I help tend a garden for an older lady from my church, and today I amassed a shirt-full of 20 peaches. I have no idea what to do with them besides eat them plain. Any suggestions? :th

Blanch. Skin. Slice. add sugar syrup. Freeze. Done.

I was going to suggest cobbler & then cut up the rest & freeze them. I like to use frozen peaches in a fruit smoothie. I pretty much freeze any leftover fruit I have for smoothies.

Yep, that's the one! This thread gets a little more action.

Good morning gardeners. Like @Acre4Me not much happening in the garden. I finally got all the leeks thinned out. Picked a cucumber and had to put a T-post next to the cherry tomato bush to hold it upright. It's over 5 feet tall and full of green tomatoes as are all the other tomato plants. There are 9 baby yellow squash on the one plant and only 2 baby zucchinis. I hope I get a lot of summer squash. Last year I discovered squash fritters. Very tasty and they freeze well. So I am hoping to make more this year. The pickles I have from last year were made with a vinegar brine @cavemanrich. They are bread and butter type and I tweaked the flavor to what I like. I gave away a couple of jars last Christmas but that was all. I would think they would still be good for another month or so. I made a big pot of Bolognese sauce yesterday and will freeze most of that for quick dinners. Now I only have 6 jars of plain tomato sauce to use up. I'm thinking enchilada sauce. Have a great day everyone.

I was away for the weekend helping look after this little cherub (see avatar), my granddaughter Frankie, who was sick and miserable. Despite instructions, DH didn't pick any zucchini or cucumbers, so it's time to learn to dehydrate! 3 large zukes dehydrated only fill the bottom 3 inches of a quart jar! I have no idea how we will like them, but I know we can't eat more than a couple at a time. Not to mention the cucumbers . . .

I'm also shredding some zucchini (with today's harvest), and dehydrating along with the cilantro, which is growing out of control. I know how to use the shredded - sneak it into spaghetti sauce, along with frozen chopped spinach or kale.

Shredded zucchini can be frozen in 2 cup batches for use in zucchini brownies or bread. I do that with ones that get big.
I also cut in half/remove seeds and stuff with Spanish rice then bake and too with cheese. It's pretty good that way too.
