Armadillo Eggs

Ingredients

24 jalapeno peppers
1 pound sausage
2 cups all-purpose baking mix
1 (16 ounce) package Cheddar cheese, shredded
1 tablespoon crushed red pepper flakes
1 tablespoon garlic salt
1 (16 ounce) package Monterey Jack cheese, cubed

Directions

1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking sheet.
2. Cut a slit in each jalapeno pepper. Remove and discard seeds and pulp.
3. In a medium bowl, mix sausage, baking mix, Cheddar cheese, crushed red pepper, and garlic salt.
4. Stuff jalapenos with the Monterey Jack cheese cubes. Shape sausage mixture around the jalapenos to form balls.
5. Arrange jalapeno balls on the prepared baking sheet. Bake 25 minutes in the preheated oven, until lightly browned.
 
Picked about 30 lbs of Starfruit yesterday and today. Dropped off about 10 lbs at neighbors along with 18 eggs and another 15 divided to a few friends. Horses are enjoying a lower sugar treat too.
Replanted banana & cumin. Downloaded UH seed order form :lol:!!!
Dropped 50 gallons of compost and 50 gallons of mulch for chickens to pick through. Getting ready! Maybe in a month i'll give seeding a try... :D
 
& today's harvest. Going to do the cherry tomato corn salsa, pickles, some type of maybe crushed tomatoes and of course the jalapenos. Ugh.

Good morning gardeners. The tomatoes look great @Sueby. I'm with you, I usually freeze my jalapeno's and even bell peppers for that matter. I use them all in cooking anyway and by freezing them you don't waste anything. I went on a Whale Watch yesterday off of Cape Ann. It was amazing. I had not been on one for over 12 years and this trip was so good. I've been concerned about my garden and decided to dig into the dirt this morning. Sure enough it was dry so I gave it all a good long drink. They are forecasting thunderstorms later today and I really hope we get the rain. I picked more Roma tomatoes and some small cucumbers this morning. And of course the usual cherry tomatoes. The butternut squash are doing better so removing the summer squash was a good idea apparently. Have a great day everyone and happy harvesting.

I picked a few small zukes from the garden. I have the Zucchini planted in a Heugelkultur raised bed and they seem to be doing fine. This is the perfect size for my wife as she likes to cut them up and put them in stir fry.

Speaking of the wife, this morning I made her breakfast with fresh blueberry (and carob chips) muffins and a ham and cheese omelette with fresh Swiss Chard from my planters and a few leaves of Basil pinched off of her planter. Who is the good husband today? Well, for at least breakfast anyway...

One of the best things I have done is grow some food out on our deck. I have planted green onions, Swiss Chard, Basil, and lots of beans which overgrew everything else in my elevated self watering planter. I also have some lettuce growing out on the deck. It's just so nice to cut off some fresh Swiss Chard, pull a green onion, or pinch off some fresh lettuce or basil as needed when preparing a meal without having to go out to the garden itself. My wife was first against the idea, but I think now she likes having green plants out on the deck and it's just a bonus we can eat them.
 
Very nice having them there on the deck every now and then BF is good also he makes me breakfast but I know I will always have a way to have few fresh what evers within reach also right now we have tires stacked 2 high as a garden about 8 of them those are our ability
