I just posted, but I donated mine to the local food pantry.There are several ways of preserving eggs. I have frozen them before in anticipation of a slow down in winter, but my birds kept churning out plenty of fresh eggs all year long and I hardly ever used them. The best outcome of freezing was with the ones that I scrambled and stored uncooked in approximately one-cup quantities. You can crack them and freeze them without scrambling but mine didn't keep their texture as well. I give away most of my fresh eggs. Whenever there is a pot luck gathering, I make large egg casseroles or maybe angel food cakes. I'd love to find a way to give them to people who have true financial barriers to fresh food.
I'm getting up to 10 eggs a day and am quickly running out of options for what to do with them. Short of chucking them, that is.
My friends are all stocked up, we are sick of eating eggs and now we have a backlog in the 20's. So, what are some things you guys do to use up those extra eggs? Today's basket (from yesterday and today)

You must live in an area with no city folks. I have a waiting list for my eggs. I sell about 4 dozen a week and could sell 6 or 8, if I had that many. I only ask $3 a doz, it covers my cost for feed. and my friends rave about the fresh eggs, say they cannot stand store bought eggs any more. I get calls from friends who are not on my normal list wanting any that I might have. i buy pink egg cartons and put signs that say free range and organic on the front. My customers love it ( must admit all gal friends) You might post a sign at the feed store. You can freeze eggs, but I never have any left over. If I ocasionally have an excess, I scramble them for the dogs. Meant to add, feed them back to your chickens. I would never throw out my eggs, there are families with not enough to eat. Check around, there is alway someone who is thankful for the free food.
