I know I've posted to this string before but I wanted to share something I learned yesterday watching a Sara Moulton episode. When making mayonnaise the trick to make it perfectly fluffy is to add the oil through the plunger cap of your food processor. Something I've never noticed in all my years of cooking, there is a tiny hole in the plunger tube cap. This let's the oil feed into the yolks at a slow and steady rate and you get perfect mayonnaise. Just another use for all those eggs.

I recently had an over abundance of eggs. I called local food pantries and found one that would take them. I made sure to tell them they were ungraded and raised in my backyard. They said they didnt mind. They repackaged them in their own cartons. My neighbors also purchased a few dozen. Now I have just two dozen...which my SO has already sold to work colleagues. Now I'm egg poor until they wake up and lay!
