What do you do with beets?

I have a couple beets just laying there in the fridge looking like... I guess looking like beets. What can I do with these three guys or gals?

you could cut them up, cook them slightly till a little tender, mix them with chopped cucumber and vinegar and a little sugar.

I like them just roasted plain.I scrub them good then roast them in a 350 oven till they are tender enough to stick a knife tip thru them.I serve them with a little kosher salt and pepper or with a drizzleof olive oil and a touch of balsamic vinegar

I steam them and add butter,salt and pepper. I also love pickeled beets.....

Steam until tender, dice, then broil with bleu cheese.
