What do you do with your leftover Thanksgiving turkey?

I love turkey sandwich with cranberry sauce. I also just love a plate of warmed up leftovers.
When all we have left is turkey, I make soup, usually turkey noodle. Sometimes I'll make a turkey casserole, maybe with broccoli and cheese but there's no telling what I might come up with when it comes to leftovers!
 
I always make extra stuffingand lots of gravy. since no one but me eats the dark meat around here I get all the leftovers!

so turkey dark meat on a thick slice of homemade bread, scoop of stuffing beside, gravy over all of it, heat in microwave.

My SIL is such a dummy. She wanted to toss this in the garbage. My babies could barely walk after the turkey fiasco!
 
Dang, we fight over the turkey drum sticks. We have two chicken drumsticks leftover for tonight, about the size of my thumb. : (
 
We finished the last of our leftovers and I am about ready to cook another just for the left overs. I cut up onions, celery and put it with sprigs of thyme in the bottom of the roasting pan, then using a rack cooked my turkey. The suggested idea came from a cooking show and they included carrots. Next time I will use those but I was originally planning to use the veggies for my cornbread dressing. Make sure you use the base portion of the celery stick.

I used some of this, pureed with broth for gravy mostly for my hubby because the rest of us like giblet gravey. That is when I realized it tasted fabulous. It was seasoned with broth from the turkey which had additional herbs, garlic etc. in cavity.

To make the soup I used the pureed veggies with the turkey drippings and turkey broth.

I added a can of chopped tomatoes, diced jalapeno and whole kernel frozen corn (it was very sweet).
I cooked it until the corn was done.

Awesome flavor.
