What do you do with your leftover Thanksgiving turkey?

I usually do pot pies, but when you get sick of turkey, just put the whole carcass outside in the run. The chickens have a fun time picking them clean. YUM.
 
Leftovers until we're bored of them or run out of sides (no more sweet taters and dressing). Then whatever comes to mind...sandwiches, enchiladas, turkey ala king, turkey salad (with mayo, sweet relish, apples), turkey biscuit breakfast sandwiches, soup, etc. My mom used to make these little turkey cheddar muffins. She layered pre-baked canned flaky layer biscuits with a mixture of egg, turkey, cheddar cheese, pimento and salt & pepper. Then baked, I think just the normal biscuit baking time. Those were yummers!
 
Turkey salad

This year we are taking the low cost and free turkeys we are getting and canning them in the pressure canner. We did our first batch yesterday and while it was not a resounding success ( yes they sealed up, but soaked up too much liquid) we learned alot from the experience and will be doing it again real soon.

I sometimes make a turkey noodle casserole, as well.
 
I like turkey salad made with diced onion, celery, sweet pickle and ranch dressing.

In response to the above post about the free Ingles turkey. We got those for a couple of years and the ones at our local store were so bad we quit taking it. Giving it to a food bank is a good idea though and we will look into it.
 
Turkey soup, turkey spaghettii, turkey salad sandwiches.. I also love just munching on the turkey by itself...
may try a turkey pot pie this year with left overs. that is if there are any. got a smaller turkey this year..
