What do you make on a cold winter afternoon? I....

Ummmm, buttermilk bisquits. Today's project was a huge pot of pork tamales. These took a lot longer than the sausage to make up! Can't wait till they're done so I can "try" one out. Tomorrow it's back to work.

Great job on the sauage its looks delish.
I make mine with pork butt and a little garlic
its the way mom used to make it.
but also added a little ground beef for more moisture.
the last time mine was too dry.
To day I made cinnamin rools and potato soup.
with left over boiled potatoes and then added
pre fired onions and a couple cans of potato soup

For the Sausage in the first post, In the 10 # ground meat we put 2 Tbsp salt,1 tbsp sugar, 1 tbsp fennel seed, 1 tsp caraway seed, 1Tbsp ground red pepper, 2 tsp coarse black pepper, 1 Tbsp ground coriander, 2 cups ice water. The recipe called for 4 Tbsp salt, but that would be way too salty for me.
 
Those look scrumptious!!! How do you eat tamales? Do you have to unwrap them? I've never had them before, but yours look so yummy I am going to have to try them. And when I do, it would be nice to know how to eat them.

I browned a chuck roast, put it on the back of the cookstove to slow cook with potatoes, carrots, celery and onions.
 
Oh, I love those roasts with all the veggies cooked together with it, Its been a long time! Maybe I should put that on my list for next weekend,

The sausages: we ran a taste test tonight, and if you like yours hot, you'll want to add extra crushed hot pepper, there was just a hint of it, we like ours spicy.

The tamales: can't put this on line. pm me if you want it ONLY if your serious about it. Its long and involved and a lot of work.
