What do you put in your homemade turkey noodle soup??

I cooked down the turkey carcass with an onion. made a yummy broth..

i'm adding carrots and celery... (and of course turkey and noodles)
what else do i put in it? what other veggies do you use...
thanks for any help..
 
I make what I call a Last Day Stroganoff. I put the turkey carcass in a large pot, add onion, garlic, a bay leaf or two and water to cover. I simmer until the carcass falls apart, then I allow it to cool enough so I can remove the bones. It is better if you strain the meat from the broth and chill the broth overnight. That way you can easily skim off the fat. Then I put the meat back in the broth, mix in a can of Cream of Mushroom Soup and bring it to a boil. When it comes to a rolling boil, I throw in a package of wide egg noodles. Be sure to stir occasionally so it doesn't stick and scorch. When the noodles are just about done I throw in some frozen peas. When the peas are done I turn off the heat and stir in a pint of sour cream. If the sour crean cools it off too much heat it back up a little, but you don't want it to boil. That's it. My husband thinks this dish is the best part of Thanksgiving.
 
Potatoes

I will also make a gravy with part of the broth, then mix that back into the soup making it thicker. Then I either add egg noodles(homemade if you have the time) or rice.
 
Fresh chives or onion tops chopped up
Fresh kale
A bay leaf (don't forget to remove) before serving!

I love brown rice in soups but hubby white rice (so I just serve the rice as a base for soup.

For color, sprinkle with paptrika before serving and garnish with a few more chives.

I also make the broth and then freeze it to use as Wonton Soup whenever I make them. It tastes better to have homemade broth in the soup instead of chicken soup base the recipe called for.
