I made jambalaya for tomorrow. I have no base of what its supposed to taste like so we'll see how it turns out.
It has:
Tomaters
Garlic
Onion bay leaf
Paprika
Smoked sausage 2lbs
30/40 shrimp 2lbs
Chili powder
Clams
Rotisserie chicken bits
Rice
Bell peppers
Oregano
Pepper

anything missing?

Can someone explain to me what "too much garlic" is?
I mean, roasted garlic dipped in butter with a potato in the kitchen is delicious.
"too much garlic" is how you weed out the less desirable relatives and hangers on at family functions.
"We all know you're just here for the wine and pie, Aunt Colleen!"
 
jambalaya
Put in rice cooker
2 cups rice
4 cups water if you don't have bone broth
The trinity (celery, bell peppers, onions) to taste
1 stick butter
Healthy sprinkling of Tony's. Then more.
Cook until the rice cooker dings.
Put the fresh shrimp on top to cook for 5 minutes.
Stir and serve.

Hot chowchow on the side or pickled jalapenos.

Just following the "authentic recipe" :idunno But we all know how that works .
I'm of the mind that good food isn't found in recipes since nobody writes it down...

It has ground celery seed since I didn't have proper celery...
I'll have to try it again with a better recipe.
 
Cajun cooking is derived like soul food. It's what us poor people eat.
Not fancy, but can be.
And everyone's Momma makes it different. There is no wrong way.
I asked Mom how to make gumbo and she said get what's in the frig and put it in a pot.

How does a cajun make a cake?
First you peel an onion. More if you are expecting more than just the family.
