It might be a little early to tell for the Cochin, but it looks like a pullet to me. They develop early. I think @Overo Mare would be a good person to ask for that one.

Hens can damage an ovary and develop hormonal issues that cause them to acquire male traits, but a young bird not laying that looks like a roo hasn’t changed gender, they’ve always been male.
