What is the best way to catch chickens

I want to know the best, safest, fastest, and most humane way to catch a fast chicken. My experience with my chickens, is that they are sometimes willing for me to pick them up, and the rest of the time, their not. Thats the most simple way i could really explain it.
Any tips and tricks on how to catch a chicken?
All help would be greatly appreciated, Thanks
Ps, I do not believe in cothangering chickens legs, as it does distress them quite a lot.

The best way to catch chickens is to wait until they are roosting.

Catching chickens at night while they're on a roost is probably easiest. However, slowly walking a chicken into a corner and then reaching down with both hands can work, as well.
 
Chickens don't want to move in the dark, so that's a plus. However, for that very reason, if they are roosting in trees you want to get them down before predators snack on them.

Yeah, and usually accompanied by a few "choice" words if you miss
