What is the science behind this?

I have hatched out a couple of batches of quail (just 3), and I always end up getting way to many males. (80% m average) . The first batch I got 3 to hatch and got 2 m and 1 f, then the next I got 8 m and 2 f, and now this hatch i got 12 m and 5 f. Why does this keep happening?
 
Your hens throw males. Just like other animals (humans included), some will throw more males than females and some throw more females than males. I have a Pheonix female that almost always has clutches that are pullet heavy
Plus the smaller the clutch, the more skewed the ratios seem to be
 
thank you, but how do you keep track of which egg comes from what hen?
You keep the hens separate if you're trying to track them. Then you label the eggs accordingly in the incubator. Then, you buy multiple incubators for when they hatch and start moving around in it. . .

Truth is, it isn't easy.
 
How many eggs did you set for those hatches? If your hatch rate was low, you may want to make adjustments to the incubator. The better your hatch, the closer you should be to 50/50, in theory.
