What is the youngest age to reasonably cull a cockerel or duckling for meat?

Consider running a couple of chicken tractors for small batches of meat birds. No integration necessary. I used the garden as a secondary run with tractor as coop at the end of 8 weeks. Worked well. They wouldn't coop train though. I favor more space for the meat birds. What goes in, comes out stinky. Space is your friend.

Quail are good and different. Biggest bang for the buck is cornish cross.
 
Quail are nice in that you can literally butcher them in your kitchen sink quite easily. I've never tasted one, but I hope to do some eventually.
The feed bag fed quail taste like a mild, wild duck. I don't like the word gamey, too often that means rotten. I think they compare favorably to a free ranged chicken. A tad stronger. Delightful. Definitely has a flavor.
