In one though (2nd pic), if you look to the left of where you'd think the 'eye-glow' is - a face seems to form and it very much begins to look like a weasel.

I tried messing with the settings but it didn't seem to help much. The 2nd and 3rd pic looks like its hopping. Do weasels and mink move in the manner? The only time I've seen mink is when they were swimming in the river.

The body posture made me think mink. Part of the weasel family. Coloring of some mink have a light chest. They run sort of odd. Not like a regular 4 legged animal. Think of a ferret or otter. They sort of lope, front end then back end.
Yes they are out to hunt at night. They could easily take a small chicken and injure standard fowl.
