Monday we extracted our first batch of our own honey. 10 quart jars.

I don't know that I've had "spring" honey before. It's much lighter in color than the last batch I bought from my bee keeper friend, which I think was harvested last fall. It tastes different from his too.

My favorite honey is clover honey, then wildflower. I like the lighter stuff
