What made you happy today?

I don't use a fixed recipe. Ground meat (In this case bison). Usually beef. Mixing a bit of ground pork in will give it a richer, slightly sweet taste. Mixing in sausage will give it a more savoury taste. Eggs, bread crumbs. What kind of bread crumbs? What do you feel like tasting? Maybe some salsa, maybe other spices.

Make mashed potatoes, again, recipe depends on what I feel like at the time. Usually potatoes, garlic, milk/cream all mashed together. In this one I added some mixed veggies.

Roll the meat out flat, put the mashed potatoes a couple inches from one edge, roll it up and seal the mashed potatoes in. Glaze with ketchup (You can add a bit of Worcestershire sauce or other things if you like), bake at 350-375 for an hour or so until done.

We're expecting snow next week, but the new chicken coop will be done by then! The new coop is amazing. I used a lot of recycled materials, but I am blessed to know a master carpenter that has been willing to do the work for me at no charge in exchange for me helping to mentor and teach his son (my godson).

I would never have been able to afford this quality of coop without him. What new materials I've had to buy have been in small chunks at a time so I have been able to spread the cost out.

If anyone is doing any project that needs paint but you don't care about the colour, check the paint department of your local hardware store for "oops" paint. I got a gallon of high quality outdoor paint for $10 because someone didn't like how the colour turned out. It's salmon pink, but goes fine with the dark green I had leftover from my house.
