We purchased them as pure bred, show stock Holland lops, but upon looking at quality Hollands on the web, I know they aren't show stock. We were also scammed by the breeder who said they had full pedigrees...

Those are definitely Holland Lops you have there. Not amazing show potential, but I've seen much worse.
Unfortunately, I know of a rabbitry just like the one your talking about. You don't happen to live in California do you?

Nope, those are Hollands. The black doe is a false dwarf, meaning that she didn't get the dwarfing gene. The Tort doe looks like a true dwarf, though I can't really say one way or the other about the buck.

I think I know exactly who you got yours from then. My friend bought a Holland Lop from them as a pet/4-H animal. They sold the bunny to her at around 5 weeks old (I didn't see the rabbit, but she said it was extremely young and small looking) and it died within a couple weeks. They refused to give her a refund or new rabbit. It's sad that you have to watch out for people like this...
 
Silkies, you can tell the dwarf/false by the general proportions, but especially the length of the ears. If the ears are more like a mini lop, and come low below the jaw they're probably a false dwarf. Rabbits with the dwarfing gene tend to have smaller ears, shorter faces, smaller legs. Kind of like you can always tell the difference between a just a small person and someone with legitimate dwarfism once you know what you're looking at.

How can you tell that the black doe is a false dwarf? Those pictures are when she was younger; she's "filled out" a lot more.
The difference between false dwarf and true dwarf isn't so much size, it's proportion. You can get very typey false dwarfs, and true dwarfs that are just a little too big to make show weight when in good condition. One of the best indicators of the true dwarf/false dwarf thing has to do with ear length. A good ear for a Holland is what they call "spoon ears;" short, rounded ears that resemble the bowl of a serving spoon. Even if you don't really notice a difference in other body parts, the ears of a false dwarf are usually significantly longer than those of a true dwarf. The proper length for the ears, according to the current breed standard, is right to or just below the jaw. An old version of the breed standard even said to DQ a rabbit with ears that hung to 1 inch or more below the jaw - obviously a false dwarf.
