Best potato salad I ever had (and the way I would make it ever after) is a little white vinegar and yellow mustard like the kind you squeeze from a bright yellow plastic bottle!
I like the idea of throwing a little jalapeno in there too, but the vinegar and mustard gives it a nice tang without the hots if you don't like hots.
