Outside of grilled steak, my favorite beef meal would have to be cubed steak with mushroom and onion pan gravy, and mashed potatoes. A green veggie or salad rounds it out.
Flour steaks, fry in hot pan, remove. Remove excess grease. Carmelize onions in same pan, add mushrooms and about 2 C of some sort of beef broth (canned, bullion, whatever) and 2 or 3 Tbsp of flour; simmer a few minutes. Return steaks to pan to reheat. Serve with gravy over both meat and potatoes.
Or a shrimp stir fry, over either noodles or rice. I make it different every time. There are about a million recipes on the web. My constants are snow peas and onion slices, and usually mushrooms. For 2 people I'd have a cup of chicken broth with about 2 Tbsp white wine, a little soy, a little toasted sesame oil and about 2 tsp corn starch in the sauce. Probably some fresh garlic put through a press, too. A pat or two of butter at the end adds richness. Just saute the veggies, add uncooked shrimp and sauce, cook til shrimp is pink and sauce is thick.
