What to do with BEETS and FENNEL?

Fennel makes for great sausage... I always take fennel and mix the green tops with sage and some ground turkey to make a crumbly sausage topping for pizza.

The rest of the fennel I eat with ranch dressing, or use as a base for a good chicken stock. Very useful stuff....

I do give some to a lady who puts the fennel tops green and fresh into her red potato salad! She used about 3/4 cup if it chopped in enough potato salad to serve ~8 people.

While googling fennel recipes, I read that many people use the fronds the same way they'd use dill. So I guess that makes sense in a potato salad! I don't use much dill, either...but I'll find something good to do with this stuff.

Yes... I would say because of its italian roots (*laughter* at dumb garden pun) I would say more like Anise in flavor. Anise was the first flavor of biscotti I ever had and I GAGGED!​
 
Yum, beets! Beet cake! Make beet cake! You can Google some recipes. My dad always planted wayyyyyyy too many beets and that is how my mom came across beet cake. She made it the first time to see if we would eat it and we knew there was something in it, but we had no idea what it was. It was super moist and chocolate-y. It is now a family favorite!
