Whatcha Making for Supper?

Absolutely - here's my best crack at it. The quantities in brackets are approximate measurements for a good pot of soup, but these are easy vary or change as desired (I rarely use measurements and it always turns out wonderful).

SMOKED SAUSAGE AND GREEN BEAN SOUP

Ingredients:
- Chicken or Veggie Stock (enough for water amount)
- Water (about 8-10 cups)
- Onions (1 large)
- Garlic (2 cloves)
- Summer Savoury (a scant tbsp, add more as desired)
- Bay Leaves (3)
- Salt and Black Pepper (to taste)
- Green Beans (2+ pounds, cut to desired size)
- Potatoes (4-5 medium)
- Carrots (2 medium-large)
- Smoked Sausage (or farmer style sausage - 3 to 4 small or one large - an alternate that would work well is ham)
- Cream or Milk (optional - a few tbsps)

Instructions:
1. Add water and stock to pot on medium heat. Toss in diced onions and garlic cloves, along with the spices (savoury, bay leaves, salt & pepper). Optional: You can sauté the onions before adding water and stock, but it is not necessary.
2. Add chopped potatoes, carrots, and whole smoked sausages. After it boils, turn the burner down and simmer until these are cooked (approximately 30 minutes).
3. Add your chopped green beans and simmer soup for another 15-20 minutes (until they're cooked to your preference).
4. While the green beans are cooking, take out the sausage and chop - doing this later conserves flavour in the sausage that would otherwise all move into the soup. Add back to the pot.
5. Optional: Just before serving add several tbsp of cream (or milk) to the pot and stir. Add more to taste if necessary. Check that salt and pepper levels are as desired.

I hope you enjoy - this is one of my favourites and incredibly flexible if you want to add or replace certain ingredients :)
This is dinner tonight. I couldn’t find any summer savoury so will have to order or grow myself and try it. I don’t have any potatoes, might add an extra carrot and some cannellini beans since I only have a pound of green beans. Regardless, this is the perfect day for the first soup of the season and I’m looking forward to trying this.

It’s best with savoury, but I do make version with basil or other herbs if I don’t have it on hand, so it should work regardless 😉

I found some, woo hoo. This is fantastic, thanks so much for sharing the recipe! I’m putting it in my recipe box.

Based on the taste, I think thyme might be a good sub for the savory also.

So glad you like it! It’s definitely one of my frequently used recipes. I could see thyme working too - I do a lot of recipes with thyme as the main spice, but haven’t tried this soup with it before.
