I am channeling my inner little Mexican guy lately. Christmas dinner plans are tamales. Having never made any...... I am doing a test run today.

Looking good! Easy but time consuming in my experience. We’re having ham, scalloped potatoes and a mandarin orange salad for Christmas dinner. I might make a spinach salad instead though, still deciding.

Fish tonight, either cod from the freezer or I’ll go get some salmon this afternoon. Not sure about sides yet, maybe some rice and and a green of some sort.

How did they turn out? Tamales are a favorite here but after trying to make them once, they became a non-homemade special

Tonight we're doing a practice run of Christmas dinner (mainly because we got a bit carried away at the seafood department and over bought). So dinner will be scallops and lobster tail

They turned out really well. I’ll tweak masa to filling ratio, but flavor is spot on.
