1 quart of home canned tomatoes, drained, or same size can from the store
1/3-1/2 onion
1 clove garlic
1 TBS olive oil (I don't measure, I just us a small "glug")
1/2 tsp salt
1 scant tsp oregano
1 slightly heaping tsp basil
Put everything in a blender. Blend for about 20-30 seconds. (I use the "sauce" button.)
Heat in a sauce pan; my husband likes it at room temp, so he just pours it over the cooked pasta. He likes the "bite" of the raw onion.

Happily the leftover salad and dressing I turned into a reasonably tasty stir fry. I mean it was mostly cabbage and bean sprouts. Threw some poached chicken in and with a tenth of the effort had a dinner twice as good as last night!It looks delicious! I hate it when I go to all that work and the results are meh.
