We also make what the kids call "Mexican Lasagna." Instead of the usual Italian ingredients, we sub in taco stuff - cheese, salsa, refried beans, tomato puree, cottage cheese, fresh tomatoes when we have 'em (they don't last long around here!) In place of noodles, we use tortillas - either all corn tortillas or alternated with flour ones. Using all flour tortillas makes it REALLY mushy ... like soggy bread. Just before serving, spread a big dollop of sour cream over the top & sprinkle it with some chopped chives or green onions. It looks pretty festive and tastes like a taco party!
Tip - Baking spreads the salsa's seasoning through the whole dish, so if you're using salsa, go EASY on the taco seasoning. I don't add it at all, but we use a spicy salsa.
