Sure:
Preheat oven 350F. In a skillet (I prefer cast iron) saute your veggies and/or meat. Set aside, turn off skillet. Shred about 4 med. size potatoes for a 12'' skillet. After shredding squeeze the water out of the potatoes. Line the bottom of the skillet with the potatoes. Salt and pepper or any other seasoning desired. Sprinkle evenly on top with the veggies/meat. Beat 6-8 normal size eggs and pour over top. Bake for about 20-25 mints until eggs are set and potatoes are soft. Pull out of oven, sprinkle cheddar cheese over the top, place bake in oven until cheese is melted. Cool for a few mins before serving.

Well, not totally sweet, no added sugar, just sweet compared to the rest. We buy Alexander's pierogi . They are delicious. I just fry them in butter after thawing them. You gotta wear a bib to eat the blueberry ones. :lol:

Edited to add husband needs to know what they are ahead of time or else he puts ketchup on the fruit ones which isn't good.
 
Working on a pizza for late lunch/early dinner...sausage, pepperoni, black olives, bell pepper. And cheese of course.

Wish I would have thought of adding some cottage cheese.
We also make what the kids call "Mexican Lasagna." Instead of the usual Italian ingredients, we sub in taco stuff - cheese, salsa, refried beans, tomato puree, cottage cheese, fresh tomatoes when we have 'em (they don't last long around here!) In place of noodles, we use tortillas - either all corn tortillas or alternated with flour ones. Using all flour tortillas makes it REALLY mushy ... like soggy bread. Just before serving, spread a big dollop of sour cream over the top & sprinkle it with some chopped chives or green onions. It looks pretty festive and tastes like a taco party!

Tip - Baking spreads the salsa's seasoning through the whole dish, so if you're using salsa, go EASY on the taco seasoning. I don't add it at all, but we use a spicy salsa.
