Tea is ready.

Supper: Chicken thigh am and mashed potatoes for hubby and I am having some sliders with ham and cheese.

Temperature is in the 70s cloudy.

When I went out to see my chickens yesterday I found one of my Barred Rocks dead and a rooster in my coop.

I do not have a rooster and do not know where he came from.

Do you think someone thought you could give him a good home?

Maybe they couldn't keep him and didn't have the heart to put him down, and it's rare to find homes for them...sooo...lucky you.

I once dropped a crow off with a cage at the humane society. My son brought him home wounded and once we healed him we couldn't get him to leave. I couldn't have him long term and couldn't find any person or organization that would take him. So, I dropped him off with a note of apology. I didn't know what else to do. I'm thinking someone picked you for their rooster's destination.

Pork stir fry, I have a bunch of veggies to use up and all the stuff for homemade sauce. Serving over rice noodles.

Homemade pizza. I tried out a no-yeast baking powder crust which turned out OK, but not as good as real pizza crust. At least it was quick, taking only 20 minutes to mix the ingredients, rest the dough, spread it out and pre-bake it before adding toppings from the garden. And baking it again.

We got up so late today that we just went to town and had Jack in the Box . At least I didn't have to cook.

Sure, I'll try to remember. The Pyrex baking dish I used was, I think, 9x13.

1 quart tomato sauce, homemade
3 lg bnls/sknls chkn breasts, cut into 2" thick sections
1 patty pan squash 1/2" dice
1 medium yellow onion 1/2" dice
1 green pepper 1/2" dice
2 small jalapeno peppers. sliced, 1/4" rings
1 cup fresh curly leaf parsley, chopped
whole basil leaves
small potatoes, halved
2 Tbs veg oil
salt/pepper

Spread 1 cup tomato sauce, bottom of dish.
Layer 1/2 of chopped veggies and herbs onto sauce.
Position chicken on top of veggies/herbs/sauce
Salt/pepper chicken
Top with rest of veggies/herbs, remainder of sauce.
Season potato halves with salt/pepper, toss with oil.
Place taters on top, pour remaining oil over top of everything.

Bake at 350°F for one hour, or until veggies are cooked. Chicken breast might be overcooked to your liking. You can substitute chicken thighs, which can handle longer cooking times.

I feel that may be true.

The other thought is someone saw him outside my coop and let him in thinking he had gotten out.

I am going to make a few calls and will keep you informed about the reasoning.

We are having Milton's Cauliflower crust pizza tonight. I bought it at Costco a few weeks ago and it really is good. Sundays are busy, so I'm looking for something easy and quick to make.
