We do this on the stovetop. Have sweet (tomato jam) and savory (curried tomato) recipes, but it's the same concept of cooking of them down. Never thought to do it in the oven!I slow roast them for 2 hours (325), with just a drizzle of olive oil and a pinch of salt. They turn out amazing and are very good on top of white fish. I would compare them to sun-dried tomatoes, but fresher and juicier.
