I checked my menu, and then I checked it twice, and it's true! Pho day is finally here! Pho with egg rolls for dinner. Made the broth and rolls a couple weeks ago. The broth came out of the freezer yesterday, and the egg rolls go from frozen to crispy in the air fryer.

I make them about 20 at a time because that's how many wrappers come in a package. Then I freeze them. It works perfectly. The air fryer is so much better than frying them, and crispier than baking them.
